It’s important to note that American style grilled cheese absolutely requires the bread to be toasted in fat, not dry.
This is traditionally done by smearing one side of each bread slice in softened butter before grilling the assembled sandwich on a (ideally cast iron, in my opinion) pan with the buttered sides facing out. Some alternative fats include mayonnaise and (my favorite) bacon grease from American-style bacon.
The resulting toast shouldn’t look like it was made in a toaster, it should look something like this:

The sandwich should still be greasy enough to leave a thin film of butter on your fingers when picked up.
Also, if not using American “cheese” which has emulsifiers added to make it melt well, it’s important to include a cheese that melts well, typically paired with a second, slightly more flavorful cheese like cheddar.

After a root canal I was told to stick to softer meals. I was recommended tomato soup and grilled cheese sandwich.
I got a fancy feta cheese tomato soup, sourdough bread and 3 kinds of cheese.
Instead of dipping the sandwich I cubed it and dropped it into the soup.
It was heavenly. Reminded me of a Gourmet pizza.
The consistency might be a little thick, but you can thin it with some milk to get it smooth.

If you add anything other than cheese, it stops being a grilled cheese. You wouldn’t call a tuna melt a grilled cheese sandwich, would you?

Anything other than cheese on a grilled cheese makes it a panini, not a grilled cheese.
We don’t call it a grilled cheese in the UK. It would be a toastie, even if you added ham it would still be a toastie. A panini is something else I believe.
I think a toastie and a panini are very similar, but a panini typically uses a stiffer bread and the toastie is kind of sealed on the sides. A grilled cheese (US) is typically a cheese sandwich toasted in a pan, so kind of somewhere in between a toastie and a panini
